Officially opening its doors on 20th May on Second Street in Sai Ying Pun, Don Pedro is an intimate, candlelit steak house and wine bar. Proudly unpretentious and reflective of Argentina’s innately relaxed parrilla grills and bodegons, Don Pedro heralds a new neighbourhood favourite where a laid-back feel and flowing wine are matched by the finest ingredients and the warmest service.
Don Pedro’s backstory is profound and personal, inspired by co-Founder Chris Mark’s time in Argentina when he fell in love with the city’s unique European charm and the country’s obsession with meat: As Chris states: "The pride they have in sharing the best of what they have - steak and wine - is the ultimate form of hospitality. I wanted to bring that romance to Hong Kong, creating a threshold where you step out of the daily grind and into a little corner of Buenos Aires where the Malbec flows as freely as the conversation".
Chris has spent years at the centre of Hong Kong’s culinary scene and has opened a number of highly successful steakhouses. With Don Pedro, he realises his singular obsession and vision of ‘the’ perfect steakhouse, a place that is relaxed, that feels like a neighbourhood hangout, somewhere that is effectively an extension of his own living room. As a long time Sai Ying Pun resident, the location is one he knows innately: "I’ve always loved this site. We want to be the place that locals return to time and again. Success for us isn't a Michelin star, it’s walking in a year from now and seeing that every guest in the room has been here before, that they know the butcher by name, that we know what wine they like and that it's waiting for them before they even order it.”
Leading the butchery programme is Seth McKenzie who previously ran a butcher shop that occupied the Don Pedro site. His connection to the space and his precision as a master craftsman in selecting, cutting and ageing meat ensures that beef has no better provenance.
At Don Pedro, ingredients are everything, so the beef is sourced from the same prestigious farms and breeders as the legendary Parrilla Don Julio in Buenos Aires, widely regarded as the world’s best steakhouse. Two definitive cuts are cooked on a plancha, the traditional Spanish flat-top griddle, to ensure both minimal manipulation and maximum flavour. In Don Pedro’s striking in-house dry-aging fridge, the 12oz Ribeye is aged for 75 days and the 8oz Tenderloin for 40 days, ensuring deep, concentrated flavour profiles.
While sublime steak is the anchor at Don Pedro, the menu also explores the broader landscape of Argentina’s proud culinary culture. Dinner may begin with house-made charcuterie, including Hong Kong black pork terrine with apricot and pistachio which arrives at your table with complimentary condiments via trolly, or ventreche, cured and smoked pork belly seasoned with black pepper and fennel pollen.
Signature appetizers like Chorizo flambé and authentic handmade beef empanadas are Argentine classics, while a special menu touch comes in the form of bone broth tea, a soul-affirming celebration of purity of beef flavour.
Side dishes are intentionally limited in scope to ensure the highest consistency and quality. Bravas potatoes are a deeply addictive rendition of the Spanish classic, while oyster mushrooms are pressed on the plancha until exceptionally crispy. The singular beauty of fresh asparagus contrasts beautifully with world class beef, as does a fresh wedge salad topped with smoked provolone and salsa golf.
When it comes to dessert, the restaurant’s namesake takes centre stage. The Don Pedro is a traditional Argentine indulgence that holds personal significance for the founders as it has long been Chris Mark’s favourite - and is even the name of co-founder Vidur Yadav’s dog. Co-Founders Chris and Yadav are both obsessed by ice cream and feel that freezing it ruins the texture, so the freshly turned gelato is made fresh daily at Don Pedro. It is then topped with toasted walnuts and a generous pour of whisky for the ultimate in simple decadence, especially with an order of hot churros alongside.

The wine programme is a dedicated exploration of Argentina’s signature grape. Moving beyond the traditional styles of Malbec, the list masterfully balances freshness and drinkability with a deep respect for terroir and Argentina’s diverse regional topography. With a nod to some of the country’s boutique wineries who champion a new wave of winemaking, Don Pedro’s wine programme remains vibrant, approachable and deeply comforting, perfectly aligning with the restaurant's hip but accessible neighbourhood atmosphere.
Guests are invited to embark on a journey through Malbec's remarkable range with an exclusive ‘Malbec Flight’ found nowhere else in Hong Kong. This curated progression offers diverse interpretations, from a vibrant Malbec-based rosé to an unconventional blend with Pinot Noir or a bold, structured classic Malbec. As Vidur puts it: "It's about balancing nostalgia and simplicity with discovery and excitement — but at the heart of it all, it's about celebrating the ultimate symbols of Argentine hospitality, steak and wine, best enjoyed their way: unpretentious, meant for sharing, and always guaranteeing a good time.
The design aesthetic at the intimate 35-seat dining room is butcher-meets-wine-bar, honouring the history of the space. Raw, stripped-back interiors and white tiles are gently illuminated by the glow of candlelight, ensuring a cosy and gently romantic atmosphere. The young team, dressed in traditional butcher coats, ensure warm, professional service to a soundtrack featuring Spanish interpretations of classic pop songs which add layers of nostalgia and soul to an evening where guests on adjoining tables may well become new friends.
