[May 2021] Shane Osborn, the award-winning chef, is delighted to announce the launch of The Arcane Collective, a collection of independently-minded restaurants that reflect the values of its founder and carry the DNA of Arcane – ingredient-driven, unpretentious, forward-looking, as well as socially and environmentally aware.
The Arcane Collective is a family of restaurants that offer outstanding, innovative food that people want to eat every day. Each will share in the spirit of Arcane; empowering talent, respecting all workers, championing creativity and sustainability and serving amazing food that brings joy to diners.
Shane Osborn states: “The Arcane Collective is a family of casual and refined dining restaurants that personify the spirit of hospitality. Each is unique, all offer delicious food cooked and served with integrity by people who are passionate about their craft. We aim to mentor and provide opportunities for chefs, sommeliers and waiters to run their own restaurants under The Arcane Collective umbrella, and support a community of specialist and artisan farmers, growers and suppliers of the best produce locally and internationally.”
Arcane was first opened by Shane and his team in 2014 and has since won accolades from far and wide. Arcane is a people- and produce-first restaurant that showcases the dynamic and cosmopolitan nature of Hong Kong. Its heart lies in deliciously simple, yet refined food born of an Aussie spirit, exacting French technique, the best ingredients from Asia, the Pacific and Europe, and the modern art of hospitality.
Cornerstone, the second restaurant under The Arcane Collective, was opened in 2019 by Chef Neal Ledesma, one of Shane’s proteges from the Arcane, where he spent 4 years learning the craft of cooking and understanding provenance and sustainability before launching his own place under Shane’s auspices. Neal’s years at Arcane gave him the tools to continually elevate the food at Cornerstone, and the menu has evolved as Neal’s confidence has grown - and as the restaurant had to face pressures from both the protests in 2019 and then COVID19 restrictions.
Chef Neal Ledesma, Executive Chef of Cornerstone, states: “I learnt so much in Shane’s kitchen; namely that food fosters human connection and sparks joy. I wanted to bring this approach, as well as the in-depth training I received from Shane to Cornerstone – and to create something intimate, affordable and a little bit irreverent on Hollywood Road. Being a part of this culinary family has been an extraordinary journey for me, and I will always be grateful for the support I get from Shane and the rest of the team to really explore and innovate. I’m so thrilled that we are taking our next step into the future with the launch of The Arcane Collective.”
Shane adds: “Dining with us at Arcane or at Cornerstone stimulates the senses, provides comfort, broadens our horizons, and encourages us to rethink our relationship with food, while respecting every person in our ecosystem, from customer to supplier and our team members. As a next step, we want to expand this deeply authentic way of understanding food and hospitality and grow The Arcane Collective into something meaningful that can help to change the conversation around food and restaurants in Hong Kong – and beyond.”
The Arcane Collective will be launching its third restaurant at LANDMARK, Central in Summer 2021. More soon to follow.
