The House is made up of five rooms - a Kitchen, Dining Room, Music Room, Bar Lounge and Garden Room - this multifaceted new venue invites guests to let their senses lead, experiencing a combination of delicious plates, carefully-crafted drinks, and a stellar music programme.

As they move through the house, guests feel the energy and the flow of different rooms with their unique designs and curated sounds. Mood and appetite dictates the journey at Melody, from dinner and late-night drinks with world class DJs and performances to afternoon cocktails with Balearic beats, and a club lounge scene during the day.

Jamie Draper, one of Hong Kong's most popular chefs, leads the kitchen delivering elevated modern European dishes dictated by the changing seasons. Drawing inspiration from his classical training working as Head Chef for legendary names like Michel and Albert Roux and elevating with modern techniques, Chef Draper’s menu at Melody has one goal in mind: deliciousness.

The menu which changes seasonally invites diners to trust the chef and engage with the team whether they're in the Dining Room; at the open kitchen counter, or grazing on smaller plates as they kick back in the Lounge or Garden Room.

Plating highlights the hero ingredients in a deliberately less-is-more style, while a Josper oven sits at the heart of Draper's menu and allows dishes to get a lick of flame for that mouth-watering wood-fired flavour.

Smaller plates and bar snacks have a more-ish vibe, letting guests start with Ibérico Pluma Skewers or Tempura Courgettes with anchovy and lemon, Lamb Ribs with herb yogurt and tahini, or Alsace Bacon Croquettes.

Appetisers are varied, from elegantly marinated delicate seafood such as Citrus cured snapper, smoked beetroot, creme fresh and pomegranate, to heartier options that showcase Chef Draper’s traditional culinary skills and methods of creating beauty from lesser-known cuts like Fried Pig’s Head Terrine.

The Josper comes into its own with fresh seafood including Grilled whole squid stuffed with rice, garlic puree & oregano. Meat dishes include prime cuts of beef, as well as Herb crusted veal chop with grilled courgettes and sauce Antiboise, and surf & turf in the form of Barbecued T-Bone Steak with Lobster Tail, dipping bisque & Koffman fries.

An array of vegetable dishes are specifically crafted to stand alone, with the likes of Maple Roasted Butternut Squash with Burnt Chili Butter or a Roasted Eggplant Escabeche.  For dessert, guests can enjoy Oolong Chocolate Tart with a Milk Tea Ice Cream or a Passion Fruit Souffle.

Service from the talented, experienced front-of-house team is led by General Manager Giammarco Sai, who brings extensive management experience in fine-dining restaurants across Australia, Thailand and Hong Kong. Service will be highly personalised and include flourishes such as tableside carvery.

Giammarco explains: "Melody has been created as a home. You can expect the warmest welcome and service, a menu that you'll love to explore and most of all an exciting and lively experience that you'll want to repeat time and time again."

Melody's beverage program is helmed by Bar Manager Kaan Gilmour from London, whose career has been based on the ethos of raising a toast to the past while giving a nod to the future. Divided into three sections, the menu will focus on classic cocktails with a twist whilst incorporating subtle molecular gastronomy techniques: Aperitifs, Seasonal Cocktails and R&D.

Guests can expect a selection of light and refreshing Aperitifs to whet their appetite before a meal - the perfect start to an evening at Melody. The main pillar of the menu - Seasonal Cocktails - will feature signature creations such as a Yellow Pepper Margarita (Agave Blend, Yellow Pepper Cordial, Slated Cucumber Agave, Rainbow Rim) and the Rhubarb Sour (Barsol Pisco, Lillet Blanc Tres Fraise, Rhubarb Syrup, Lime), that capture the essence of the time of year. The R&D section will showcase the latest innovative and experimental creations from Melody’s bar team - drinks that are unexpected, unusual and give space for the team to flex the full spectrum of their talents and creativity.

Gilmour says, “We want the experience at Melody’s bar to be highly personable. We want to chat to our guests and get to know their preferences and figure out their flavour profile. I’m very proud of the signature menu we have created, but our knowledgeable bar team will endeavour to cater to bespoke orders whenever asked.”

The approachable and carefully curated wine list features 150 labels, predominantly from Italy and France, with wine by the glass all the way up to show-stopping magnum bottles.

Leading Melody's music programme is Johnny Hiller, who has been instrumental in the international club scene since the early 90s and has played legendary clubs including Fabric in London, Club Air in Tokyo and Cookies in Berlin. Johnny is driven by the desire to bring back the art of listening and so has personally overseen Melody's fully soundproof music room to create the best experience.

Johnny states: 'Our Music Room is totally unique in Asia. Decked in elegant mid-century furniture, it boasts incredible acoustics thanks to some of the world's finest speakers, while the all-vinyl collection promises to entertain with a mix of genres redefining eclectic in the best possible way.

From Cantopop to 1970's Cambodian jazz, Balearic, cosmic, wave and electronic with a slice of funk & soul,  all the music played throughout the day is meaningful, with substance and depth, largely avoiding the mainstream to reinforce Melody’s reputation as a true hotspot for audiophile culture.

Johnny concludes: "Whether listeners are music connoisseurs or simply curious, this unique sanctuary in Hong Kong is always inclusive with a mixology experience like nowhere else. Our in-house DJs will be joined by true global greats for residencies which will ensure that Melody is as renowned for its world-class music as it is a game-changing food, drinks and service experience."
