(HONG KONG, 26 JANUARY 2026) – Salon des Refusés invites diners to travel down the sun-drenched shores of the Mediterranean with Hommage à Marseille, the first in Chef Luca Marinelli’s new monthly series dedicated to the great culinary cities of the coast. Taking place on Wednesday, 28 January, this 10-course dinner celebrates Marseille’s vibrant cuisine, maritime identity, and spirited diversity.

Taking place on Wednesday, 28 January, this 10-course dinner celebrates Marseille’s vibrant cuisine, maritime identity, and spirited diversity.
A Tribute to the Soul of Marseille
The evening’s menu pays homage to one of Chef Luca’s favourite cities—a Mediterranean gem where cultures converge and the scent of the sea fills every breeze. Inspired by Marseille’s bustling Vieux Port, its crystalline calanques, and its storied blend of Provençal and North African influences, the menu captures the city’s distinctive rhythm of sun, salt, and spice. Hommage à Marseille marks the beginning of Salon des Refusés’ new journey, with future editions exploring the flavours of Milan, Nice, Menton, Genova, and Sanremo.
The experience begins with a series of snacks including Tarbouriech oyster with mignonette au Pastis, grilled sardine farci “alla boîte,” panisse frites with harissa mayonnaise, cod tarama with French radish and toasted crouton, and clams poêlées.
Raw courses showcase Marseille’s deep connection to the sea, highlighted in tuna tartare à la Provençale, bright with sun-kissed herbs and citrus.
Guests will then move into the warmth of the hot courses, including golden eye snapper bouillabaisse with saffron potato and rouille, and Ma Yau “alla tuba”, paired with artichoke barigoule (a famous Provençal dish of braised vegetables) and vin jaune—a nod to Mediterranean tradition told through contemporary craftsmanship.
To conclude, the sweetness of spiced coconut sorbet and a classic madeleine bring the meal to a gentle, fragrant close.
Available for one night only on 28 January from 6pm on, the Hommage à Marseille menu is priced at $988* per person. Guests may enhance their evening with a Sommelier’s Selection for an additional $488—a four-glass pairing curated to highlight the layers and nuance of Marseille’s maritime flavours and Chef Luca’s daily catch.
